Citrus Sesame Turkey Lettuce Cups with Green Apple

Citrus Sesame Turkey Lettuce Cups with Green Apple

Ingredients
• Avocado oil spray or 1 tablespoon neutral oil
• 750 g lean ground turkey
• Freshly ground black pepper, to taste
Sauce
• 3 tablespoons low-sodium soy sauce
• Juice of 1 lemon
• 1 tablespoon sesame oil
• 1 teaspoon freshly grated ginger
• 2 small garlic cloves, finely minced
• 1/2 teaspoon Sriracha, or to taste
• 1 1/2 tablespoons honey
Fresh additions
• 1 green apple (Granny Smith), finely diced
• 3 mandarins, segmented and halved
To serve
• 8–10 crisp lettuce leaves (Little Gem or butter lettuce work well)
• 2 tablespoons toasted sesame seeds
• 2 spring onions, finely sliced
• Extra Sriracha or a squeeze of lemon, to taste
Directions
1. Heat a large nonstick pan over medium heat and lightly coat with oil. Add the ground turkey, breaking it up with a spoon. Cook for 6–8 minutes until lightly browned and cooked through. Let it take on a little colour, this builds flavour.
2. While the turkey cooks, whisk together the soy sauce, lemon juice, sesame oil, ginger, garlic, Sriracha, and honey. Taste. It should be savoury with a gentle lift of heat and brightness.
3. Pour the sauce over the cooked turkey. Stir well and let it simmer for 2–3 minutes until slightly reduced and glossy. Add black pepper. Then add the diced green apple and mandarins, and cook for just 60–90 seconds, until the apple is lightly warmed but still crisp.
4. Spoon the warm turkey mixture into lettuce cups. Finish with toasted sesame seeds and sliced spring onions. Add a touch more Sriracha or lemon if you like a sharper edge. Serve immediately.

The turkey mixture can be cooked in advance and stored in the fridge for up to 3 days. Reheat gently and add a squeeze of fresh lemon before serving to brighten the flavours.
